I’ve been ruined for eggs. It’s unbelievable how different Spier eggs are from the conventional battery or even commercially ‘free range’ options. Most notably how thin the shells are, and how intensely yellow the yolks are – apparently from all the chloroform in the natural vegetation they graze. Would be interesting to note if it changes a little with the seasons. Either way, it’s been a bit of an eye opener.
Enjoyed shooting out to the farm and documenting some of the egg collection. Seems so old school, small and unadulterated.
